Baja Fresh
The great thing about dining at Baja Fresh last week was that it was on WalMart. The department I am working in passed an inspection with flying colors a couple of weeks ago, and this was WalMart's reward to us for a good job and our hard work.

Baja Fresh is a popular lunch and dinner spot in Meridian's shopping area. Many workers from the stores in the area frequent this place for lunch or dinner because the service is fast and the food is great.

So our boss, Kevin, and two co-workers and I arrived during the lunch rush for our reward. They ordered enchiladas, but I wanted something light and nutritious but yummy and got the Chicken Pocada. I was the only one who had the day off and could have ordered a beer, but decided get bottled water.

It was very crowded, and we thought we wouldn't be able to find a seat, but we found one near a group of cute firefighters. I said to one co-worker "They can light my fire anytime!" and Sheila agreed with me. I might have a boyfriend, but I can look!

Our food came quick and they call your number when it's ready. Kevin was a gentleman and got our trays. My Chicken Pocada was the biggest portion and came with marinated grilled chicken with cheese on top. It also came with a salad, tortillas, grilled onions and peppers, sour cream, salsa verde, and guacamole. It was light and filling, and I ate all of the tortillas with the chicken and fillings inside. I only ate toast that night for dinner. That's how stuffed I was.

The food and service at Baja Fresh was great, but the only problem I have with the place is that they don't have a dessert menu. We girls were craving sweets or fried ice cream, but when I went to ask one of the servers about a dessert menu, I was disappointed to discover they didn't have one.

Oh well! Baja Fresh is open late seven days a week and is located in the same plaza that WalMart, ShopKo, and Old Navy is in. Another great place to eat after a fun day of shopping. It is very busy during lunch and dinner rush hour and seating can be hard to get, but it is worth the wait
