Restaurant Description:

Sustainable sushi...in Nampa? Shine up your chopsticks, because it’s true! Simple Sushi is a small, culinary boutique in downtown Nampa, where you’ll find non-endangered seafood like Tombo Tuna, Alaskan King Salmon, Kanpachi, and Dungeness Crab. But we go beyond rice and nori - our menu also includes a range of locally-grown produce in fresh salads, creative light fare, and a great selection of sake, wine and beer. The owners, Tracy and Clif Volpi , beautifully renovated the space at 1214 1st Street South with their own two hands.

The environment is earth-friendly, with high-quality, reusable chopsticks, locally-crafted dinnerware, and returnable take-out plates. The walls will showcase a revolving array of Idaho artists. Chef Matthew “Matteeo” O’Connor has a broad background in Pacific Rim cuisine, sushi, and natural foods. His experience is as diverse as his talent: along with an extensive restaurant career, he’s worked as a private chef in Hollywood, Aspen, Hawaii, Park City and here in Idaho; he was also the travelling chef with the U.S. Snowboard Team. He’s had his hand in starting up numerous succesful restaurants in Utah and California, and is excited to bring his energy and creativity to Simple. The Volpis hope to complement the existing Nampa businesses, to help localize downtown, and create a successful, sustainable future for us all.

	Best I've had in Idaho This is the best Sushi place I have found, and I have tried them all. While I really do like Shige's, the service is poor, and it can be pretty hectic there. This is a nice intimate, cozy place to get some of the freshest Sushi I have ever had. I grew up in San Francisco, and have eaten at any fine Sushi bars. It is a must !

my family and I went to Simple Sushi on opening night this past wednesday. the sushi is fantastic and fresh. I had a dish called Phoenix, it comes topped with crab and it was amazing. It was so good, I ended up ordering a second helping. We also had the alaskan king salmon, wow it was incredible

the service was excellent. my daughter isnt a big fan of sushi so the owner brought out some sliced up oranges which she loved.

The decor is right out of a classic design for a sushi bar in Tokyo. seating is for 19 so be sure to make a reservation

I highly recommend this place, two thumbs up
